Cocktail: Slow and Low

Ingredients:
1¼ oz Galliano L’Aperitivo
¾ oz Aurora Manzanilla
1 oz Grapefruit Juice
¼ Passionfruit Syrup
¼ Lemon Juice
Instructions: Build in a mixing glass, shake and strain into glass
Garnish: Dust glass in lemon tart powder and beet powder tied with black bow. Coconut shell served with crushed ice and raw oyster on the half shell.
Glassware: Prosecco Glass with 1 Kold Draft Ice Cube

Troy Clarke is the Director of Mixology and Education, Martignetti Companies and Co-Owner of Twelve24 Cocktails. He also served as President of the United States Bartenders Guild, Boston Chapter (2011-2014). He brings over 20 years of experience in the Restaurant and Hospitality Industry; ranging from time behind the bar, to years of Executive, Food & Beverage Management, and countless hours of continued education in the field.

 
As the Founder & Co-Owner of Twelve24 Cocktails, Clarke sets out to create thoughtfully designed and carefully crafted apparel and tools for bartenders and industrial professionals. Prior to Martignetti, Clarke held numerous leadership titles including Director of Food & Beverage, Banquets Director and Director of Outlets at various well respected hospitality companies including; Sonesta Collection, The Ritz-Carlton, Starwood Hotels & Resorts, Marcus Hotels & Resorts, among others.
 
Troy’s passion for the beverage industry grew through his many years working in restaurants, serving people across the country. His drive to continually learn and share his knowledge has led him to completing the 5 day BAR program in NYC along with Spirit Certification with the United States Bartenders Guild, and various wine certifications with Court of Masters and International Sommelier Guild.
 
With an affinity for high quality ingredients and the total creativity that recipe design allows, Troy loves both creating original cocktails as well as cultivating the classics. As Director of Mixology for Martignetti, his passion and experience serves establishments throughout New England. Troy provides inspired and tailored cocktail design, and professional bartender training to take any account to the next level of total service and efficiency.

Cocktail: Kickback Sling

Ingredients:
1 oz Cherry Heering
1 oz Pimms Cup
½ oz Sandeman 20yr Tawny Port
½ oz Mango Nectar
¾ oz Fresh Lime Juice
1 barspoon of Strega liqueur
Dash of Angostura bitters
Instructions: Build in a mixing glass, shake, strain into a highball glass.
Garnish: Orange peel crown with cloves and straw

Lulu Martinez is a Mixologist and Director of Events for Liquid Productions in NYC. She has worked almost every side of the industry in her nearly 20 years in hospitality. Beginning as a 15-year-old dishwasher at an Italian joint three doors from her home in Tucson, AZ, Lulu spent her years traveling and working the food and bar scene in different areas of the world. From gun friendly karaoke bars, to famed high volume nightclubs, to Michelin three starred restaurants; Lulu honed her skills and grew to love the world of hospitality, food and beverage. In 2009, after 8 years in Las Vegas, Lulu moved to New York City to immerse herself in the cocktail culture and hone her skills in the trade.

 
After stints at the Washington Square Hotel and with Julie Reiner at Lani Kai, she moved to famed NYC tiki destination Painkiller (PKNY), where she became a staple, and prominent member of the bar team. She left PKNY to become lead bartender at Andy Seymour and Steve Olson’s agave palace, Viktor & Spoils. When the buildings owner unceremoniously cut V&S loose--ending the space’s run as a cocktail focused club--Lulu went to work with Seymour and his company Liquid Productions. As part of the top industry team at LiqPro, Lulu handles everything from cocktail creation, to event planning and execution and is an integral part of the beverage program implementation team.
 
Lulu has extensive wine knowledge to go along with her cocktail credentials of passing BarSmarts Wired and completing the industry standard Beverage Alcohol Resource (B.A.R.) 5-day Advanced course. With her knowledge and experience and a dedication to hard work, Lulu always aims to create a style of service that combines the best of the fast paced world of club life with the efficiency and detail oriented world of fine dining.

Mast-Jägermeister US

Cocktail: Jägermeister Thai Tea

Ingredients:
1½ oz Jägermeister
1½ oz Lemon grass simple syrup*
3 oz Panthai ice tea**
1 oz Coconut milk
Kafir leaf garnish
Instructions: In a Chimney Collins build over kold draft ice and top with coconut milk, garnish & serve.
* Lemongrass Simple Syrup: One stalk lemongrass per quart of 1-1 simple
**Panthai Iced Tea recipe (Yield: Serves 4-6): 1 cup Pantai Thai Tea Mix, 4 cups water.
Bring water to boil and add the thai tea mix. Gently boil tea for about 3 minutes. Remove from heat. Steep tea for 30 minutes. The more concentrated the tea flavor, the better the Thai tea tastes. Strain the tea leaves. Set finished Thai tea aside to cool. Make this ahead of time and have the Thai tea chilling in the fridge.

1 ½ oz. Cask & Crew Ginger Spice Whiskey
½ oz. Cask & Crew Whiskey Straight Rye blend
1 oz fresh ginger simple syrup reduction*
¾ oz fresh squeezed lemon juice
Prosecco
7-UP
Sprig of fresh mint
Fresh Ginger
Powdered sugar
Burnt cinnamon stick
Oak plank for smoking
*Fresh Ginger Simple Syrup Reduction: Fresh ginger reduction, cornstarch, sugar, water, cinnamon.
Instructions: Combine Cask & Crew Ginger Spice Whiskey, Cask & Crew Whiskey Straight Rye Blend, Ginger Simple Syrup Reduction and lemon juice. Shake well. Smoke mint and ginger on the oak plank. Double strain cocktail into smoked glass. Top with Prosecco and 7-UP. Grate fresh cinnamon on top
Garnish: Fresh mint, dusted with powdered sugar. Top with burnt cinnamon stick.

Hailing from Milan, Italy, Marco Baroli is Cibo Wine Bar's head bartender and mixologist. Marco's passion for bartending began in 2010 when he started as a server at Studio 54 in Riccione. There, he learned the fundamentals of hospitality, training on the job to step in to a position as bartender.

After a season in Riccione, he headed to Miami Beach, seeking the sun, sand, and adventure Miami has to offer. He joined the team of Miami Beach's iconic Osteria Romana, a staple of the Miami Beach restaurant scene. While honing his skills, Marco practiced mixology, eventually joining the opening bar team at Cibo Wine Bar, South Beach. The flagship of the Cibo Venues, Cibo SoBe opened in December of 2014, and boasted an impressive lounge area as well as a breathtaking rooftop bar. As lead bartender, Marco assisted with the creation of Cibo's specialty cocktail list, and trained the staff on Cibo's award-winning wine program. The cocktails Marco creates highlight fresh ingredients in unique combinations that stimulate the palate and awaken the senses.
