Instructions: Build in mixing glass, stir, strain into a highball glass

Troy Clarke is the Director of Mixology and Education, Martignetti Companies and Co- Owner of Twelve24 Cocktails. He also served as President of the United States Bartenders Guild, Boston Chapter (2011-2014). He brings over 20 years of experience in the Restaurant and Hospitality Industry; ranging from time behind the bar, to years of Executive, Food & Beverage Management, and countless hours of continued education in the field. As the Founder & Co-Owner of Twelve24 Cocktails, Clarke sets out to create thoughtfully designed and carefully crafted apparel and tools for bartenders and industrial professionals. Prior to Martignetti, Clarke held numerous leadership titles including Director of Food & Beverage, Banquets Director and Director of Outlets at various well-respected hospitality companies including; Sonesta Collection, The Ritz-Carlton, Starwood Hotels & Resorts, Marcus Hotels & Resorts, among others. Troy’s passion for the beverage industry grew through his many years working in restaurants, serving people across the country. His drive to continually learn and share his knowledge has led him to completing the 5-day BAR program in NYC along with Spirit Certification with the United States Bartenders Guild, and various wine certifications with Court of Masters and International Sommelier Guild. With an affinity for high quality ingredients and the total creativity that recipe design allows, Troy loves both creating original cocktails as well as cultivating the classics. As Director of Mixology for Martignetti, his passion and experience serves establishments throughout New England. Troy provides inspired and tailored cocktail design, and professional bartender training to take any account to the next level of total service and efficiency.

Tito’s Handmade Vodka is America’s Original Craft Vodka. In 1995, Bert “Tito” Beveridge obtained the first legal permit to distill in Texas and created Tito’s Handmade Vodka. We batch distill our corn-based vodka using old-fashioned pot stills and the vodka is naturally Gluten-Free. Tito’s Handmade Vodka is distilled and bottled by Fifth Generation Inc. in Austin, Texas on the very same land where the whole venture started.

Cocktail: Jan’s Mango Comber

Ingredients:
1.5 oz Jan Stephenson’s Mango Rum
0.5 oz lime juice
1.0 oz Ginger Syrup
2 dashes cardamom bitters
Splash champagne
Instructions: Combine all ingredients into a boston shaker with ice and shake hard for at least 15 seconds. Fine strain contents into a hollowed out cucumber placed in an appropriate stand such that it stands vertically. Top up with Champagne. Insert a long bend straw and garnish with a lei of thai orchids.
Garnish: Lei of Thai Orchids
Glassware: 1 whole cucumber, hollowed out in a NEAT Glass

Cocktail: Birds and the Bees

Ingredients:
3 oz Beeswax infusion of Bird Dog 10 year old
Bourbon Whiskey Elder Flower Liqueur and Benedictine
0.75 oz House Made Charred Lemon and
Cardamom Gum Syrup
1 oz Aquafaba
1/2 tsp Citric Acid
Instructions: Dry Shake Ingredients for 20-30 seconds, add ice and wet shake contents for 45 seconds. Double strain into a chilled coupe glass.

Garnish with dehydrated lemon wheel, topped with honey and Saffron caviar and Saffron strands, alongside edible Viola flowers.

Beeswax Washing process: Melt approximately 2oz of local, organic beeswax over a double boil. Using a funnel, pour melted was into a dry bottle. Roll the bottle so that the wax coats the inside of the bottle. Pour in 18oz of Bird Dog 10 year old Bourbon Whiskey, 3oz Elder Flower Liqueur and 4oz Benedictine.
Garnish: Garnish with dehydrated lemon wheel, topped with honey and saffron caviar and saffron strands, alongside edible Viola flowers.

Ingredients:
2 oz Barrilito 3 stars
2 dashes orange bitters
1 oz of Real Coco
0.5 oz Lime
0.5 oz egg whites
0.5 oz Disaronno
Add lime zest
Instructions: Combine all ingredients in a shaking tin and shake vigorously strain in glass previously rimmed.
Garnish: Brown sugar and coconut rim

Born in San Juan, Puerto Rico. Joymar is a 3rd generation of hotel service professionals in her family. Started serving and bartending in 2001 at The Ritz Carlton Isla Verde. Her family ran the bar Cafe Seda in Old San Juan where she learned about basic cocktails and speed. In 2004 opened The Ritz in South Beach and 2006 worked as a bartender for Norwegian Cruise Lines. In 2011 she found opportunity moving to Vegas and starting from the ground up as a barback at The Cosmopolitan of Las Vegas. Buddy Vs the Cake Boss Buddy Valastro restaurant called and she happily took the lead position for 2 years until in that same hotel (Palazzo) the Latin concept by Chef Lorena Garcia "Chica" opened and she took the role of Lead Bartender. Today she runs the wine program at Chica and is currently one of their Beverage managers in training. Joy is an active member of the United States Bartenders Guild Las Vegas and is the chair of the new member’s engagement committee.
